While removing the back glass of the iphone 15, I forgot about the flex cable, moved the back glass up, and snapped the flex cable connecting the back glass and the phone.
Is my only option here to purchase a wireless charging assembly? Or can I get the flex cable alone?

Actually, yes, you can get just the flex cable if you're confident in your soldering skills to make four small solder joints. I'd describe myself as slightly better than average electronics soldering skills, and this is something I would attempt; in fact, I've done a similar repair on an iPhone 11 Pro.
Here's one flex cable I located; there may be more if you continue to search on a phrase like "iphone 15 flex cable for wireless charging replacement".
However, if cost is a factor, the full coil plus cable is only about $1 USD more than the cable alone. If it was me, the main consideration would be whether I wanted to go to the work of removing and replacing the charging coil; it looks like the new coil I linked to does contain the magnets.
