Does your old battery have the same issues? Also are you sure all the connectors are plugged in properly?

Sounds like either the battery or the battery connector got damaged.

What tool did you use to remove / pry the battery out?

Did you make sure to unplug battery before removing the battery physically?

Have you inspected the battery cable itself for any signs of tear / physical damage?

Also check the battery connector if it's damaged as well and make sure you have plugged it in fully.

1 and 2 correlate with each other, looks like the phone can't detect the battery properly.

3. That is normal as unplugging the battery resets date and time to 1/1/1980 which is fixed by either auto synchronizing date/time via Wi-Fi, iTunes or Sim Card Cellular Data.

4. Related to 1 and 2, not detecting battery properly.

5. This is bad news. That generally means the Wi-Fi chip has gone bad and at this point I would consider using the other iPhone 4S that doesn't have Wi-Fi greyed out.
