@applealcaffe Unfortunately, the short answer is: No!

You can choose the highest specced one upon purchase, but it cannot be upgraded by consumers themselves, as the memory is in the SoC itself and the “SSD” is soldered on NAND chips on the logic board.

SSD upgrade is possible with extensive soldering and chip programming, it is doable but barely economical even in China.

RAM upgrade is not possible at this point, all currently known desoldering attempts to remove the RAM chips from the SoC have failed, plus it is impossible to source the chips.

It is not entirely impossible, and you can buy appropriate NAND chips from aliexpress or similar chinese webshops. However they will cost around half of what apple would charge + you need proper equipment and handywork to replace and reconfigure the boards. It takes experience to do it, and if you pay someone to do it, you will be very close to what it would cost to buy it directly pre-configured from apple.

You can get on with a fast external drive and the smallest amount of SSD like 256 or 512Gb though... Buy as much RAM as you can afford that's more important imho.

Also it seems that apple has basically created their own custom nand chips with a custom firmware that us serialized plus encrypted and thus paired to the actual m1/m2 chip. So it is probably impossible to replace or upgrade it outside buying it straight from apple at ordering. It is therefore a no go for me.
