yes. your harddrive is where all the information is stored so if you replace it then you will lose all of your info also. just like with a computer.

but luckily you can back up the data before you switch the drives. so make sure to back up the data on the hard new hard drive from the old one before you make the switch. good luck with your ps3.

but what if i dont have anything on my old one. do i just pop the new one in and im good to go? im trying to call someone at ifixit but so far this is my only option to get an answer.
you pop the new one in and then you have to format and partition it, etc. you will have a new operating system so you will have to create new users with whatever access rights that you choose. i would suggest that you disable the guest user. After that you should be good to go!
luckily though your username and account info is saved on the ps4 servers so once you log in then all your info will follow. so any games that you download and all of that will still be on your account. that is not ps specific.
