antony, in order to get anything out of the NAND memory, you will require to either purchase a NAND reader $$$ or build your own. for that you will require the data sheet etc. Here is the link for a site where you can get an idea how to build it, here is more of a background information about it, and some more good information on here. There is a good reason why companies charge extensivle yfor data recovery :-) Hope this helps to get you in the right direction. Good Luck.

The spec. sheets for the NAND chips are easy to find. I also found one interesting website that sells readers http://flash-extractor.com, but was unable to find specific instructions on how to build a reader or any iPhone data recovery services that read data directly from the NAND.

Antony, that is where link number 1 in my answer comes in handy. There are some commercially available, those are the ones that are for law enforcement, data recovery specialists etc. Very $$$$
