Is it worth it to upgrade parts on my 2011
Just trying to get some opinions on if I should upgrade some parts (such as ram, memory,etc) or just look at buying a new one

Upgrade to 16 GB of RAM. (2 - 8GB sticks)

Serial ATA (6 Gb/s) the Samsung 860 QVO drive would work well
Change the hard drive I/R cable to the 2012 model for the faster data transfer

Get about 5 more years of service from this excellent. well built and repairable machine.

One more thing how hard is it to go from 2011 to 2012 hard drive cable

I always replace the cable with the newer better 2012 cable when I replace the drive MacBook Pro 13" Unibody (Mid 2012) Hard Drive Cable. Here's more Your Hard Drive Cable Is A Ticking Time Bomb Adding a strip of electricians tape on the uppercase helps reduce the chaffing on the rough surface. I also am careful on how I bend the cable as creasing it can damage it! I use a BIC pen Ink straw to help me form the radius bends.

First of all, perhaps you should think what you are using for.
For Basic stuff, it is good for a over-all,
If there is no major fault or issues you can check using apple hardware test before you decide on the next step.
Just like mine, I maxed out the Memory RAM capacity and upgraded to SSD. My system is the MBP 2012 model 15” with ODD
Battery changed out as it was worn out, but in general good for most application to do.

Battery blew up about 2 years ago so I had to get that replaced already lol. definitely looking into Ram. What’s the big plus to switching to SSD
