One of the distinguishing factors in choosing between the iPhone 6 and iPhone 6 Plus is the Signal Antenna. If the iPhone 6 Signal Antenna fits in the smaller 6 Plus's then potentially you can modify the smaller phone to use the better Signal Antenna and have a phone which is the best of both worlds. Can this be done?

The cellular antenna is the upper part of the case so you can't swap antenna's.
Frankly the full millimeters of difference in size is not enough to make much of an difference between the two models.
The part you have in your URL is just the connector that moves the signals between the PCB and the case.
